Ingredients
  

  • 12 Medjool dates pitted and chopped
  • 1 cup old-fashioned rolled oats
  • ½ cup unsalted dry-roasted cashews
  • ¼ cup hemp seeds
  • ¼ cup fresh lemon juice about 2 medium lemons
  • 1 tbsp grated lemon zest divided
  • 2 tsp vanilla extract
  • ¼ cup unsweetened shredded coconut

Equipment

  • Microplane or fine grater

Method
 

  1. Place chopped Medjool dates into the bowl of a food processor.
  2. Add rolled oats, dry-roasted cashews and hemp seeds on top.
  3. Grate fresh lemon zest directly into the mixture and pour in the lemon juice.
  4. Add vanilla extract for depth of flavor.
  5. Pulse the ingredients in the food processor until a sticky, cohesive mixture forms.
  6. Sprinkle in the shredded coconut and pulse lightly to combine.
  7. Scoop about a tablespoon of dough and roll it between your palms into a ball.
  8. Place each formed ball onto a lined baking sheet or plate.
  9. Continue rolling until all dough is used.
  10. Chill in the refrigerator for at least 15 minutes to firm up.
