- Place chopped Medjool dates into the bowl of a food processor.
- Add rolled oats, dry-roasted cashews and hemp seeds on top.
- Grate fresh lemon zest directly into the mixture and pour in the lemon juice.
- Add vanilla extract for depth of flavor.
- Pulse the ingredients in the food processor until a sticky, cohesive mixture forms.
- Sprinkle in the shredded coconut and pulse lightly to combine.
- Scoop about a tablespoon of dough and roll it between your palms into a ball.
- Place each formed ball onto a lined baking sheet or plate.
- Continue rolling until all dough is used.
- Chill in the refrigerator for at least 15 minutes to firm up.
