Ingredients
  

  • 2 cups watermelon cut into 2 cm cubes
  • 2 cups cantaloupe cut into 2 cm cubes
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 large avocado diced
  • 200 g feta cheese cubed
  • 2 tbsp fresh mint chopped
  • 2 tbsp fresh basil chopped
  • 1 tbsp fresh chives sliced
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh lemon juice
  • 2 tbsp hot honey
  • 2 tbsp white wine vinegar
  • 1 garlic clove finely grated
  • 1/2 cup olive oil

Method
 

  1. Cut the watermelon, cantaloupe, cucumber, avocado, and feta into similarly sized cubes for a neat presentation and balanced bites.
  2. Arrange the watermelon, cantaloupe, cucumber, and feta across a large serving platter in an even pattern.
  3. Scatter the halved cherry tomatoes and diced avocado throughout the arrangement.
  4. In a small bowl, whisk together the lemon juice, hot honey, white wine vinegar, grated garlic, salt, and black pepper until smooth.
  5. Slowly drizzle in the olive oil while whisking continuously until the dressing becomes slightly thickened and emulsified.
  6. Taste the dressing and adjust the seasoning if needed for your preferred balance of sweetness and acidity.
  7. Drizzle the dressing evenly over the salad ingredients.
  8. Sprinkle the chopped mint, basil, and chives across the top.
  9. Let the salad sit for 5 minutes so the flavors can mingle and develop.
  10. Serve immediately while the fruit remains crisp and juicy.
