Ingredients
  

  • 1 French baguette sliced into ½-inch rounds
  • 2 tbsp olive oil
  • 170 g goat cheese softened
  • 2 cups fresh strawberries diced
  • 2 tbsp honey
  • 1 tbsp balsamic glaze
  • 2 tbsp fresh basil leaves thinly sliced
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 1 tsp lemon zest

Method
 

  1. Preheat the oven to 190°C and line a baking tray with parchment paper.
  2. Arrange the baguette slices in a single layer on the tray and lightly brush both sides with olive oil.
  3. Bake the bread slices for 8–10 minutes until golden and crisp around the edges.
  4. Remove the crostini from the oven and let them cool slightly while preparing the toppings.
  5. Add the diced strawberries, basil, lemon zest, salt, and black pepper to a mixing bowl and gently toss until evenly combined.
  6. Spread a generous layer of softened goat cheese over each toasted bread slice.
  7. Spoon the strawberry mixture evenly over the goat cheese layer.
  8. Drizzle honey and balsamic glaze lightly across the assembled crostini for extra flavor and shine.
  9. Arrange on a serving platter and serve immediately while the bread is still crisp.
