Ingredients
  

  • 4 salmon fillets about 170 g each
  • 200 g fresh strawberries diced
  • 45 ml balsamic vinegar
  • 30 ml honey
  • 15 ml olive oil
  • 2 garlic cloves minced
  • 5 g fresh thyme leaves
  • 2 g sea salt
  • 2 g black pepper
  • 2 g smoked paprika
  • 15 ml lemon juice
  • 30 ml water
  • 10 g chopped fresh basil
  • 5 ml neutral oil for cooking

Method
 

  1. Pat the salmon fillets dry with paper towels to help them sear evenly and develop a golden crust.
  2. Season both sides of the salmon with salt, black pepper, and smoked paprika.
  3. Heat olive oil in a skillet over medium heat until shimmering.
  4. Place the salmon skin-side down into the hot skillet and cook undisturbed until the edges begin turning opaque and lightly crisp.
  5. Carefully flip the salmon and continue cooking until the center becomes tender and flaky.
  6. Transfer the salmon to a plate while preparing the glaze.
  7. In a saucepan, combine strawberries, balsamic vinegar, honey, garlic, lemon juice, thyme, and water.
  8. Cook the mixture over medium heat while stirring gently until the strawberries soften and release their juices.
  9. Continue simmering until the sauce thickens into a glossy glaze with a rich fruity aroma.
  10. Return the salmon to the skillet and spoon the warm strawberry balsamic glaze generously over each fillet.
  11. Let the salmon warm through briefly so the glaze lightly caramelizes around the edges.
  12. Garnish with chopped basil and serve immediately while hot and glossy.
