Ingredients
  

  • 680 g large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 2 tbsp Cajun seasoning
  • 1 tsp Cajun seasoning extra for finishing
  • 1 bunch scallions thinly sliced
  • 450 g cauliflower rice
  • 1/4 tsp salt

Method
 

  1. Pat the shrimp dry with paper towels until no moisture remains
  2. Toss the shrimp in a bowl with Cajun seasoning until evenly coated
  3. Heat olive oil in a large skillet over medium-high heat until shimmering
  4. Add shrimp in a single layer and cook until pink, opaque, and slightly curled
  5. Remove shrimp from the pan and set aside to prevent overcooking
  6. In the same skillet, melt butter and add sliced scallions
  7. Sauté until fragrant and slightly softened, releasing a mild onion aroma
  8. Stir in cauliflower rice and spread evenly across the pan
  9. Cook while stirring occasionally until tender and lightly golden
  10. Sprinkle in salt and remaining Cajun seasoning for extra flavor
  11. Return shrimp to the pan and gently toss everything together
  12. Cook briefly until heated through and coated in buttery spices
