Ingredients
  

  • 18 Medjool dates pitted
  • 150 g soft goat cheese
  • 3 tbsp chopped pistachios
  • 2 tbsp chopped walnuts
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp flaky sea salt
  • 1/8 tsp freshly ground black pepper
  • 1 tbsp pomegranate seeds

Method
 

  1. Slice each Medjool date lengthwise on one side and gently remove the pit while keeping the date mostly intact.
  2. Place the goat cheese into a small bowl and stir until smooth and creamy for easier filling.
  3. Fill each date with about 1 teaspoon of goat cheese, pressing gently so the filling stays secure.
  4. Sprinkle chopped pistachios and walnuts over the cheese while lightly pressing them into the filling.
  5. Arrange the stuffed dates on a serving platter with the open side facing upward.
  6. Drizzle honey evenly over the dates so it lightly coats the tops without pooling.
  7. Add pomegranate seeds and fresh thyme leaves for brightness and texture.
  8. Finish with flaky sea salt, black pepper, and a light drizzle of olive oil.
  9. Let the dates sit for 5 minutes before serving so the flavors blend together beautifully.
