Lemon Mint White Bean Dip (Fresh & Creamy 5-Minute Appetizer)

Ingredients
  

  • 1 can 400 g cannellini beans, drained and rinsed
  • 2 tbsp fresh mint leaves finely chopped
  • 1 tbsp lemon juice 15 ml
  • 1 tsp lemon zest 5 g
  • 1 tbsp olive oil 15 ml
  • 1 garlic clove 5 g
  • 1/4 tsp salt 1.5 g
  • 1/4 tsp black pepper 1 g
  • 2 –3 tbsp water 30–45 ml

Method
 

  1. Add the garlic clove to a food processor and blend until finely minced and fragrant
  2. Add the drained white beans, mint, lemon juice, lemon zest, and olive oil
  3. Blend until the mixture becomes smooth and creamy, scraping down the sides as needed
  4. Add water gradually to loosen the texture until it becomes silky and spreadable
  5. Taste and adjust with salt and pepper for a balanced, bright flavor
  6. Blend once more until fully emulsified and light in texture
  7. Transfer to a bowl and let it rest briefly so the flavors meld together
