Ingredients
  

  • 3/4 cup rolled oats
  • 1/2 cup dried blueberries
  • 1/2 cup almond butter
  • 4 Medjool dates pitted
  • 1/4 cup sliced almonds
  • 1/4 cup hemp seeds
  • 2 1/2 tsp lemon zest
  • 6 tbsp fresh lemon juice
  • 2 tsp honey
  • 1/4 tsp salt
  • 2 tbsp powdered sugar

Method
 

  1. Add oats, dried blueberries, almond butter, dates, almonds, hemp seeds, lemon zest, lemon juice, honey, and salt into a food processor
  2. Blend until the mixture becomes thick, sticky, and holds together like a soft dough
  3. Pause to scrape down the sides to ensure everything is evenly combined
  4. Line a tray with parchment paper and scoop small portions of the mixture
  5. Roll each portion between your hands until smooth, round balls form
  6. Place the balls on the tray and refrigerate until firm and cool to the touch
  7. Mix powdered sugar with a small amount of lemon juice until a smooth glaze forms
  8. Lightly drizzle the glaze over the chilled balls for a glossy finish
  9. Sprinkle finely chopped dried blueberries on top while the glaze is still wet
