Healthy Spinach White Bean Egg Bake with Feta

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion finely chopped (about 1 cup)
  • 6 cups fresh baby spinach roughly chopped
  • 1 can 15 oz / 425 g cannellini beans, rinsed and drained
  • 8 large eggs
  • cup milk 80 ml
  • ½ cup cottage cheese 120 g
  • 1 cup crumbled feta cheese 150 g
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ¼ tsp crushed red pepper flakes
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Preheat the oven to 375°F (190°C) and lightly grease a medium baking dish with a small amount of olive oil.
  2. Heat the remaining olive oil in a skillet over medium heat until shimmering.
  3. Add the chopped onion and cook until softened and lightly translucent, stirring occasionally.
  4. Stir in the spinach and cook until wilted and tender, releasing most of its moisture.
  5. Add the drained white beans to the skillet and gently mix so they warm through without breaking apart.
  6. In a large mixing bowl, whisk the eggs until smooth and slightly frothy.
  7. Pour in the milk and add the cottage cheese, whisking until the mixture becomes creamy and well combined.
  8. Season the egg mixture with oregano, garlic powder, crushed red pepper, salt, and black pepper.
  9. Fold the cooked spinach, onion, and beans into the egg mixture, ensuring everything is evenly distributed.
  10. Stir in about three-quarters of the feta cheese, reserving the rest for topping.
  11. Pour the mixture into the prepared baking dish and spread it evenly.
  12. Sprinkle the remaining feta over the top for a golden, savory finish.
  13. Bake until the eggs are set and the top is lightly golden, about 30–35 minutes.
  14. Allow the bake to cool slightly before slicing so the texture firms up beautifully.
