Ingredients
  

  • 2 cups frozen blueberries
  • 1 cup unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 2 tbsp Greek yogurt
  • 1 –2 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Add frozen blueberries to a blender and pour in a small amount of almond milk until just barely covering the fruit
  2. Add protein powder, Greek yogurt, sweetener, vanilla extract, and a pinch of salt
  3. Blend on high speed until the mixture becomes thick, smooth, and creamy like soft-serve
  4. Pause occasionally to scrape down the sides for an even texture
  5. Add a little more milk only if needed to help blending without making it too runny
  6. Taste and adjust sweetness while the mixture is still soft and easy to mix
  7. Transfer the mixture into a freezer-safe container and smooth the surface
  8. Freeze for 2–3 hours until firm but scoopable
  9. Let it sit for a few minutes before serving to soften slightly
  10. Scoop and enjoy with your favorite toppings
