Ingredients
  

  • 680 g boneless skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp garlic powder
  • 2 tsp paprika
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 240 ml pizza sauce
  • 100 g shredded mozzarella cheese
  • 75 g cooked ham diced
  • 80 g pineapple chunks drained if using canned
  • 500 g broccoli florets
  • 15 ml olive oil
  • 20 g grated Parmesan cheese

Method
 

  1. Preheat the oven to 200°C and lightly grease a large baking dish with olive oil.
  2. Combine garlic powder, paprika, Italian seasoning, salt, and black pepper in a small bowl.
  3. Place the chicken pieces in the baking dish and toss thoroughly with the seasoning mixture until evenly coated.
  4. Spread the chicken into an even layer and bake until the pieces begin to turn golden around the edges.
  5. Remove the dish from the oven and stir in the pizza sauce until every piece is coated.
  6. Scatter the diced ham evenly over the chicken mixture.
  7. Sprinkle the mozzarella cheese across the surface for full coverage.
  8. Add the pineapple chunks evenly throughout the dish.
  9. Return the baking dish to the oven and bake until the cheese is melted, bubbly, and lightly golden.
  10. While the chicken finishes cooking, steam the broccoli until bright green and tender-crisp.
  11. Divide the broccoli among serving bowls.
  12. Spoon the cheesy chicken mixture over the broccoli.
  13. Finish with grated Parmesan cheese and serve immediately while hot and melty.
