Ingredients
  

  • 1 medium ripe avocado
  • 60 ml plain Greek yogurt
  • 15 ml fresh lemon juice
  • 1 small garlic clove finely minced
  • 2 g salt
  • 2 slices whole grain or sourdough bread
  • 50 g cucumber thinly sliced
  • 1 g smoked paprika
  • 5 ml olive oil

Method
 

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a mixing bowl
  2. Add Greek yogurt, lemon juice, minced garlic, and salt to the bowl
  3. Blend the mixture using an immersion blender until smooth, fluffy, and pale green
  4. Toast the bread slices until golden brown and crisp on the edges
  5. Spread the whipped avocado mixture generously over each slice of toast
  6. Arrange thin cucumber slices on top for a fresh crunch
  7. Sprinkle lightly with smoked paprika for a subtle smoky aroma
  8. Drizzle a small amount of olive oil over the top just before serving
