- Pour Doritos into a food processor and pulse until fine crumbs form, or crush in a sealed bag.
- Stir paprika, garlic powder, onion powder, salt, and pepper into the crushed chips for extra flavor.
- Place flour in one shallow dish, beaten eggs in a second, and Doritos crumbs in a third.
- Gently roll each cube of mozzarella in flour to coat and shake off excess.
- Dip floured cheese into the eggs, then press into the seasoned Doritos crumbs until fully covered.
- Heat vegetable oil in a deep pan over medium-high heat until it reaches 350°F (use a thermometer if you have one).
- Carefully slide a few coated cheese bites into the hot oil, ensuring they don’t touch.
- Fry for about 2–3 minutes or until the exterior turns golden and crisp, turning gently for even coloring.
- Remove bites with a slotted spoon and drain on paper towels to absorb excess oil.
- Let cool slightly before serving so the cheese stays delightfully molten inside.
