Ingredients
  

  • 180 ml extra-virgin olive oil
  • 45 ml white balsamic vinegar
  • tsp lemon zest
  • 45 ml fresh lemon juice
  • 100 g goat cheese crumbled
  • 75 g sugar snap peas thinly sliced
  • 75 g green olives thinly sliced
  • 15 g fresh mint finely chopped
  • 15 g fresh dill finely chopped
  • 1 garlic clove grated
  • 4 whole-wheat pita breads toasted and cut into pieces
  • ¼ tsp ground black pepper

Method
 

  1. Pour the olive oil onto a large shallow plate, allowing it to spread evenly across the surface
  2. Add the vinegar, lemon zest, and lemon juice, gently whisking to combine while keeping the oil slightly separated for visual appeal
  3. Sprinkle the crumbled goat cheese evenly across the oil so it sits lightly on top
  4. Scatter the sliced snap peas and olives over the mixture, creating a colorful layer
  5. Add the chopped mint and dill, distributing them evenly for a fresh herbal aroma
  6. Grate the garlic directly over the dip so its fragrance blends into the oil
  7. Lightly swirl everything together just enough to combine flavors while keeping distinct textures visible
  8. Finish with a sprinkle of black pepper and a touch of extra lemon zest for brightness
  9. Serve immediately with warm toasted pita pieces for dipping
