Ingredients
  

  • 3 cups ripe mango diced
  • 1 cup red bell pepper finely diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño pepper seeded and minced
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 cup cucumber diced

Method
 

  1. Wash and dry all fresh produce thoroughly before preparing the salsa.
  2. Peel the mangoes and dice them into small bite-sized cubes for easy scooping.
  3. Finely chop the red bell pepper, cucumber, red onion, cilantro, and jalapeño into even pieces for balanced texture.
  4. Add the diced mango, vegetables, cilantro, and jalapeño to a large mixing bowl.
  5. Pour fresh lime juice over the mixture and sprinkle in lime zest for extra citrus aroma.
  6. Season with sea salt and black pepper to enhance the sweetness of the mango.
  7. Gently fold everything together until evenly combined without crushing the mango pieces.
  8. Let the salsa rest for about 10 minutes so the flavors blend and become more vibrant.
  9. Taste and adjust the seasoning with additional lime juice or salt if needed.
  10. Serve chilled or slightly cool with tortilla chips, tacos, grilled chicken, or seafood.
