Ingredients
  

  • 450 g cooked shrimp peeled and deveined
  • 3 medium zucchini about 600 g
  • 1 tbsp lime juice
  • 1 tbsp reduced-sodium soy sauce
  • 1 tsp freshly grated ginger
  • 1 small garlic clove finely grated
  • 3 tbsp extra-virgin olive oil
  • 1/4 tsp crushed red pepper flakes
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped roasted unsalted peanuts
  • 1 tbsp chopped green onions

Method
 

  1. Spiralize the zucchini into long noodle-like strands and place them in a large mixing bowl.
  2. Pat the cooked shrimp dry with paper towels to remove excess moisture.
  3. In a small bowl, whisk together the lime juice, soy sauce, grated ginger, garlic, olive oil, and red pepper flakes until well combined.
  4. Pour the dressing over the zucchini noodles and toss gently until every strand is lightly coated.
  5. Add the shrimp to the bowl and mix carefully to distribute evenly.
  6. Fold in the chopped mint and green onions for fresh herbal flavor.
  7. Sprinkle the chopped peanuts over the mixture for crunch and texture.
  8. Let the bowl rest for 5 minutes so the flavors can blend together.
  9. Taste and adjust seasoning with additional lime juice if desired.
  10. Serve immediately while the zucchini remains crisp and refreshing.
