Ingredients
  

  • 1 cup feta cheese crumbled (about 150 g)
  • 1/4 cup plain Greek yogurt 60 ml
  • 2 tbsp extra virgin olive oil 30 ml, divided
  • 2 tbsp honey 30 ml
  • 1/2 tsp ground black pepper
  • 1 tbsp fresh herbs finely chopped (such as parsley or dill)
  • 1/2 tsp lemon zest optional
  • 12 –16 slices whole wheat baguette toasted

Method
 

  1. Add crumbled feta, Greek yogurt, and 1 tablespoon olive oil into a food processor and blend until smooth and creamy, scraping down the sides as needed
  2. Continue blending until the mixture becomes light, fluffy, and spreadable with no visible chunks
  3. Lightly toast the baguette slices until golden and crisp on the edges while still tender inside
  4. Spread a generous layer of whipped feta onto each warm toast slice
  5. Sprinkle black pepper evenly over the top for a subtle kick
  6. Drizzle honey over each piece, allowing it to lightly pool and glaze the surface
  7. Finish with chopped fresh herbs and a touch of lemon zest for brightness
  8. Drizzle the remaining olive oil lightly over the assembled toasts before serving
