Ingredients
  

  • 2 salmon fillets about 170 g each
  • 250 g asparagus trimmed
  • 1 small red onion sliced (about 100 g)
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh lemon juice

Method
 

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper
  2. In a small bowl, whisk together balsamic vinegar, soy sauce, olive oil, garlic, and Dijon mustard until glossy and well combined
  3. Arrange salmon fillets in the center of the tray and place asparagus and sliced onion around them
  4. Drizzle half of the glaze over the vegetables, tossing lightly until coated
  5. Spoon the remaining glaze evenly over the salmon, ensuring a shiny, even layer
  6. Roast in the oven until the salmon flakes easily with a fork and the edges of the vegetables begin to caramelize
  7. Remove from the oven and drizzle fresh lemon juice over everything for a bright finish
  8. Serve immediately while warm and aromatic
