Ingredients
  

  • 2 cups raw almonds 280 g
  • 1 tbsp olive oil 15 ml
  • 1 tbsp maple syrup 15 ml
  • 1 tsp smoked paprika 2 g
  • ½ tsp ground cumin 1 g
  • ½ tsp garlic powder 1 g
  • ½ tsp salt 3 g
  • ¼ tsp cayenne pepper 0.5 g
  • ½ tsp ground cinnamon 1 g

Method
 

  1. Preheat the oven to 175°C (350°F) and line a baking tray with parchment paper for even roasting and easy cleanup
  2. In a mixing bowl, combine olive oil and maple syrup until smooth and slightly glossy
  3. Add smoked paprika, cumin, garlic powder, salt, cayenne, and cinnamon, stirring until the spices are evenly distributed
  4. Toss the raw almonds into the bowl, mixing thoroughly until each nut is well coated in the spice mixture
  5. Spread the almonds in a single, even layer on the prepared tray to ensure they roast uniformly
  6. Place the tray in the oven and roast for about 12–15 minutes, stirring halfway through as the aroma becomes fragrant and slightly toasted
  7. Watch for a deepened golden color and a crisp outer coating forming on the almonds
  8. Remove from the oven and let them cool completely on the tray, allowing the coating to set and become crunchy
