- Preheat the oven to 175°C (350°F) and line a baking tray with parchment paper for even roasting and easy cleanup
- In a mixing bowl, combine olive oil and maple syrup until smooth and slightly glossy
- Add smoked paprika, cumin, garlic powder, salt, cayenne, and cinnamon, stirring until the spices are evenly distributed
- Toss the raw almonds into the bowl, mixing thoroughly until each nut is well coated in the spice mixture
- Spread the almonds in a single, even layer on the prepared tray to ensure they roast uniformly
- Place the tray in the oven and roast for about 12–15 minutes, stirring halfway through as the aroma becomes fragrant and slightly toasted
- Watch for a deepened golden color and a crisp outer coating forming on the almonds
- Remove from the oven and let them cool completely on the tray, allowing the coating to set and become crunchy
