Ingredients
  

  • 1 cup Greek yogurt 240 g
  • cup freeze-dried blueberries 15 g
  • 2 tsp lemon zest 4 g
  • 2 tbsp vanilla extract 30 ml
  • ¼ tsp ground cardamom or cinnamon 1 g
  • tsp salt 1 g

Method
 

  1. Place freeze-dried blueberries in a sealed bag and gently crush them into small pieces or powder-like crumbs
  2. Add Greek yogurt to a mixing bowl and stir until smooth and creamy
  3. Mix in lemon zest, vanilla extract, ground spice, and salt until fully combined and fragrant
  4. Fold in the crushed blueberries, ensuring they are evenly distributed throughout the mixture
  5. Line a tray with parchment paper and spoon small clusters of the mixture onto it
  6. Shape into bite-sized rounds using the back of a spoon, keeping them slightly thick
  7. Transfer the tray to the freezer and let the bites firm up until fully set and solid
  8. Once frozen, remove and let sit briefly at room temperature before serving for a softer texture
