Ingredients
  

  • 2 slices bread thick-cut, about 1–1.5 cm each
  • 1/2 cup ricotta cheese 120 g
  • 1 cup mixed berries 150 g, such as strawberries, blueberries, raspberries
  • 1 tsp lemon zest 5 g
  • 1 tbsp lemon juice 15 ml
  • 1 tbsp honey or maple syrup 15 ml
  • 1/4 tsp vanilla extract optional, 1 ml
  • 1 pinch salt about 1/8 tsp

Method
 

  1. Toast the bread slices until golden brown and crisp on the edges while still soft inside
  2. In a small bowl, stir ricotta with lemon zest, lemon juice, honey, and a pinch of salt until smooth and creamy
  3. Taste the mixture and adjust sweetness or citrus for a balanced flavor
  4. Spread the ricotta mixture generously over the warm toast, allowing it to slightly melt into the surface
  5. Scatter fresh berries evenly over the top, pressing lightly so they stay in place
  6. Drizzle a little extra honey for shine and sweetness
  7. Finish with a light sprinkle of lemon zest for a fresh citrus aroma
  8. Serve immediately while the toast is warm and the topping is cool and creamy
