Method
- Heat a small nonstick pan over medium heat and add the oil until it shimmers lightly
- Place the tortilla in the pan and warm it for about 30 seconds per side until soft and slightly toasted
- Remove the tortilla and set aside, keeping it warm
- Add the spinach to the same pan and cook until wilted, stirring gently as it softens and reduces in volume
- Push the spinach to one side and crack the egg into the pan
- Cook the egg until the whites are set and the edges begin to firm up
- Sprinkle feta cheese over the egg so it softens and slightly melts from the heat
- Add a splash of water to the pan and cover briefly to create steam, helping the egg cook evenly
- Transfer the egg and spinach mixture onto the warm tortilla
- Fold gently and serve immediately while hot and fragrant
