Ingredients
  

  • 1 tsp avocado oil 5 ml
  • 1 corn tortilla about 25 g
  • 1 cup fresh baby spinach 30 g
  • 1 large egg 50 g
  • 2 tbsp crumbled feta cheese 30 g
  • 1 tbsp water 15 ml

Method
 

  1. Heat a small nonstick pan over medium heat and add the oil until it shimmers lightly
  2. Place the tortilla in the pan and warm it for about 30 seconds per side until soft and slightly toasted
  3. Remove the tortilla and set aside, keeping it warm
  4. Add the spinach to the same pan and cook until wilted, stirring gently as it softens and reduces in volume
  5. Push the spinach to one side and crack the egg into the pan
  6. Cook the egg until the whites are set and the edges begin to firm up
  7. Sprinkle feta cheese over the egg so it softens and slightly melts from the heat
  8. Add a splash of water to the pan and cover briefly to create steam, helping the egg cook evenly
  9. Transfer the egg and spinach mixture onto the warm tortilla
  10. Fold gently and serve immediately while hot and fragrant
