Ingredients
  

  • 1 can 15 oz / 425 g black beans, rinsed and drained
  • 1/4 cup 60 g plain Greek yogurt
  • 2 tsp 10 ml fresh lime juice
  • 2 tbsp 30 ml olive oil
  • 1/4 cup 40 g finely chopped onion
  • 1/4 cup 15 g chopped fresh cilantro
  • 1/2 tsp 1 g ground cumin
  • 1/2 tsp 1 g garlic powder
  • 1/2 tsp 1 g dried oregano
  • 1/4 tsp 0.5 g smoked paprika
  • 1/4 tsp 0.5 g cayenne pepper (optional)
  • 1/4 tsp 1.5 g salt
  • 1/4 tsp 1 g black pepper

Method
 

  1. Add the black beans, Greek yogurt, olive oil, and lime juice to a food processor
  2. Blend until smooth, stopping to scrape down the sides for an even texture
  3. Add chopped onion and cilantro, then pulse lightly to keep a bit of texture
  4. Sprinkle in cumin, garlic powder, oregano, paprika, cayenne, salt, and pepper
  5. Blend again until creamy and well combined, adjusting thickness with a splash of water if needed
  6. Taste and adjust seasoning, adding more lime juice for brightness or salt for balance
  7. Transfer to a bowl and let it rest for a few minutes to allow flavors to meld
