Ingredients
  

  • 1 ½ cups canned chickpeas drained and rinsed
  • 1 cup cucumber diced
  • ¾ cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp olive oil
  • 1 ½ tbsp lemon juice

Method
