Ingredients
  

  • 4 cups broccoli florets finely chopped
  • 45 ml water
  • 37 ml extra-virgin olive oil
  • 2 cloves garlic finely chopped
  • 1 tsp Italian seasoning
  • 0.5 tsp lemon zest
  • 0.25 tsp salt
  • 0.25 tsp crushed red pepper flakes
  • 4 slices whole-grain bread
  • 90 g shredded fontina cheese

Method
 

  1. Add chopped broccoli and water to a skillet and cook covered until the broccoli turns bright green and slightly tender
  2. Remove the lid and stir in olive oil, garlic, Italian seasoning, and red pepper flakes until fragrant
  3. Continue cooking until the moisture evaporates and the broccoli softens further
  4. Transfer the mixture to a bowl and mix in lemon zest and salt for a fresh finish
  5. Place two slices of bread on a flat surface and sprinkle a layer of cheese evenly over each
  6. Spoon the broccoli mixture over the cheese and spread it evenly
  7. Add more cheese on top to ensure a gooey, melty texture
  8. Cover with the remaining bread slices and gently press down
  9. Heat oil in the skillet and cook the sandwiches until the bread turns golden brown
  10. Flip carefully and cook the other side until the cheese melts completely and the sandwich is crisp
