Ingredients
  

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 cup diced yellow onion
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 cup shredded carrots
  • 1 cup diced red bell pepper
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp sriracha sauce
  • 1 tsp brown sugar
  • 1/4 cup water
  • 2 tbsp chopped green onions
  • 1 tbsp chopped fresh cilantro
  • 1 head butter lettuce or Boston lettuce
  • 1 tsp toasted sesame seeds
  • 1/4 tsp black pepper
  • 1/2 tsp salt

Method
 

  1. Wash and carefully separate the lettuce leaves, then pat them dry and chill until ready to serve.
  2. Heat olive oil in a large skillet over medium heat until shimmering.
  3. Add the ground turkey and cook while breaking it apart with a wooden spoon until lightly browned and fully cooked.
  4. Stir in the diced onion and cook until softened and slightly translucent.
  5. Add the garlic and grated ginger, cooking just until fragrant and aromatic.
  6. Mix in the shredded carrots and diced bell pepper, allowing the vegetables to soften slightly while still keeping a little crunch.
  7. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, Worcestershire sauce, sriracha, brown sugar, water, salt, and black pepper.
  8. Pour the sauce into the skillet and stir well until the turkey mixture is evenly coated and glossy.
  9. Simmer for several minutes until the sauce thickens slightly and the flavors blend together.
  10. Remove the skillet from the heat and stir in the green onions and fresh cilantro.
  11. Spoon the warm turkey filling into the chilled lettuce cups.
  12. Sprinkle toasted sesame seeds over the top and serve immediately while warm and fresh.
