- Wash and carefully separate the lettuce leaves, then pat them dry and chill until ready to serve.
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the ground turkey and cook while breaking it apart with a wooden spoon until lightly browned and fully cooked.
- Stir in the diced onion and cook until softened and slightly translucent.
- Add the garlic and grated ginger, cooking just until fragrant and aromatic.
- Mix in the shredded carrots and diced bell pepper, allowing the vegetables to soften slightly while still keeping a little crunch.
- In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, Worcestershire sauce, sriracha, brown sugar, water, salt, and black pepper.
- Pour the sauce into the skillet and stir well until the turkey mixture is evenly coated and glossy.
- Simmer for several minutes until the sauce thickens slightly and the flavors blend together.
- Remove the skillet from the heat and stir in the green onions and fresh cilantro.
- Spoon the warm turkey filling into the chilled lettuce cups.
- Sprinkle toasted sesame seeds over the top and serve immediately while warm and fresh.
