Ingredients
  

  • 10 oz spaghetti or egg noodles
  • 4 tbsp unsalted butter
  • 10 garlic cloves finely minced
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp brown sugar
  • 1/4 tsp black pepper
  • 1/2 cup freshly grated parmesan cheese
  • 2 tbsp chopped green onions
  • 1 tbsp neutral cooking oil
  • 2 tbsp reserved noodle water
  • 1 tsp toasted sesame seeds

Method
 

  1. Bring a large pot of salted water to a boil and cook the noodles until just tender with a slight bite.
  2. Reserve a few tablespoons of noodle water before draining the noodles completely.
  3. Heat a large skillet over medium heat and add the butter along with the neutral cooking oil.
  4. Stir in the minced garlic and cook gently until fragrant, soft, and lightly golden without letting it burn.
  5. Add the soy sauce, dark soy sauce, oyster sauce, sesame oil, brown sugar, and black pepper to the skillet.
  6. Stir the sauce continuously until glossy and fully combined with the butter.
  7. Add the drained noodles directly into the skillet while the sauce is hot.
  8. Toss the noodles thoroughly so every strand becomes evenly coated in the garlic sauce.
  9. Pour in a splash of reserved noodle water if the noodles seem dry or sticky.
  10. Sprinkle in the parmesan cheese and continue tossing until melted and silky.
  11. Cook for another minute until the noodles look glossy and smell deeply savory.
  12. Remove from heat and garnish with chopped green onions and toasted sesame seeds before serving warm.
