Ingredients
  

  • 3 tbsp mayonnaise
  • 3 tbsp neutral oil such as canola or sunflower, divided
  • 1 1/2 tbsp fresh lemon juice
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 4 cups shredded coleslaw mix
  • 1 medium scallion thinly sliced
  • 200 g smoked tofu cut into small cubes
  • 1 tbsp cornstarch
  • 4 whole-wheat wraps

Method
 

  1. In a mixing bowl, whisk together mayonnaise, 1 tablespoon oil, lemon juice, salt, and pepper until smooth and slightly creamy
  2. Add the coleslaw mix and sliced scallion, tossing until every strand is evenly coated and glossy
  3. Place the tofu cubes in a bowl and sprinkle with cornstarch, gently tossing until lightly coated
  4. Heat the remaining oil in a skillet over medium-high heat until shimmering
  5. Add the tofu pieces in a single layer and cook, stirring occasionally, until golden brown and crisp on the edges with a slightly firm texture
  6. Remove the tofu once evenly crisp and allow it to rest briefly to maintain crunch
  7. Warm the wraps slightly so they become soft and pliable
  8. Spoon a generous layer of coleslaw onto each wrap, followed by a portion of crispy tofu
  9. Fold and roll tightly, ensuring the filling is evenly distributed for each bite
