Ingredients
  

  • 1 1/2 cups 225 g feta cheese, crumbled
  • 1/4 cup 60 g cream cheese, softened
  • 1 tbsp 15 ml extra-virgin olive oil
  • 1 1/2 tbsp 22 ml cold water
  • 1 garlic clove finely grated
  • 1 tbsp 15 ml honey
  • 1/3 cup 50 g pomegranate seeds
  • 1/4 cup 35 g pistachios, chopped
  • 1 tsp 1 g fresh thyme leaves

Method
 

  1. Add feta, cream cheese, olive oil, water, and garlic into a food processor
  2. Blend until the mixture becomes smooth, creamy, and slightly fluffy with no visible chunks
  3. Pause to scrape down the sides so everything blends evenly
  4. Taste and adjust consistency by adding a few drops of water if needed
  5. Spoon the whipped feta onto a shallow serving plate
  6. Use the back of a spoon to create soft swirls and a slight well in the center
  7. Drizzle honey evenly over the surface so it lightly pools into the swirls
  8. Sprinkle pomegranate seeds across the top for a fresh, juicy burst
  9. Scatter chopped pistachios for crunch and contrast
  10. Finish with fresh thyme leaves for aroma and color
  11. Serve immediately while creamy and soft
