Ingredients

  • 1 1/2 cups 225 g fresh strawberries, hulled and chopped
  • 1/2 cup 120 ml plain yogurt
  • 1 cup 240 ml almond milk or any milk of choice
  • 1/2 cup 120 ml coconut cream
  • 1/3 cup 60 g chia seeds
  • 2 tbsp 30 ml honey or maple syrup
  • 1 tsp 5 ml vanilla extract
  • 1/8 tsp 1 g salt

Method

  1. Add chopped strawberries to a blender and blend until smooth and vibrant in color
  2. Pour the strawberry purée into a mixing bowl and stir in yogurt, milk, and coconut cream until fully combined
  3. Mix in honey, vanilla extract, and a pinch of salt, tasting to adjust sweetness if needed
  4. Sprinkle in chia seeds gradually while whisking to prevent clumping
  5. Let the mixture sit for 5–10 minutes, then stir again to evenly distribute the seeds
  6. Cover the bowl or transfer to jars and refrigerate for at least 4 hours or overnight
  7. Once chilled, stir gently to check thickness—the pudding should be creamy and spoonable
  8. Serve topped with extra strawberries or your favorite toppings for added texture
