Ingredients
  

  • 1 sheet puff pastry about 250 g, thawed
  • 120 g goat cheese softened
  • 1 cup 120 g fresh or frozen cranberries
  • 3 tbsp 36 g light brown sugar
  • 2 tbsp 30 ml honey
  • 1 tbsp 15 ml orange juice
  • 2 tbsp 20 g chopped pistachios
  • 1 large egg beaten
  • 2 tbsp 15 g all-purpose flour
  • 1/4 tsp salt

Method
 

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper
  2. In a small saucepan, combine cranberries, brown sugar, orange juice, and salt, then cook until the berries soften and release a glossy, slightly thick sauce
  3. Let the cranberry mixture cool until it becomes jam-like and easier to spread
  4. Lightly flour your surface and roll out the puff pastry into a large rectangle with even thickness
  5. Spread the softened goat cheese evenly over the pastry, leaving a small border around the edges
  6. Spoon the cranberry mixture over the cheese, distributing it evenly for balanced flavor
  7. Sprinkle chopped pistachios on top for added crunch and color
  8. Cut the pastry into strips or segments, then carefully shape them into a circular wreath on the prepared tray
  9. Twist or overlap the pieces slightly to create a decorative pattern
  10. Brush the entire wreath with beaten egg for a golden, glossy finish
  11. Bake until the pastry is puffed, crisp, and deeply golden, with a fragrant aroma
  12. Allow it to cool slightly before serving so the filling sets and flavors meld
