Method
- Add tahini and fresh lemon juice to a food processor and blend until smooth and slightly thickened, about 30–60 seconds
- Pour in olive oil, add garlic and salt, then blend again until the mixture looks creamy and pale
- Add half of the chickpeas and process until mostly smooth, scraping down the sides as needed
- Add the remaining chickpeas and blend until thick and creamy with a slightly fluffy texture
- Drizzle in cold water gradually while blending until the hummus becomes silky and spreadable
- Taste and adjust with more lemon juice or salt if needed, blending briefly to combine
- Transfer to a bowl and swirl the top with a spoon for a soft, whipped finish
