Ingredients

  • 1 can 400 g chickpeas, drained and rinsed
  • 3 tbsp tahini 45 ml
  • 3 tbsp fresh lemon juice 45 ml
  • 2 tbsp extra virgin olive oil 30 ml
  • 1 garlic clove 5 g, peeled
  • 1/2 tsp salt 3 g
  • 2 –3 tbsp cold water 30–45 ml

Method

  1. Add tahini and fresh lemon juice to a food processor and blend until smooth and slightly thickened, about 30–60 seconds
  2. Pour in olive oil, add garlic and salt, then blend again until the mixture looks creamy and pale
  3. Add half of the chickpeas and process until mostly smooth, scraping down the sides as needed
  4. Add the remaining chickpeas and blend until thick and creamy with a slightly fluffy texture
  5. Drizzle in cold water gradually while blending until the hummus becomes silky and spreadable
  6. Taste and adjust with more lemon juice or salt if needed, blending briefly to combine
  7. Transfer to a bowl and swirl the top with a spoon for a soft, whipped finish
