Ingredients
  

  • 2 pieces rice cakes
  • 1 medium ripe avocado
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh herbs parsley or cilantro
  • 1 tbsp sliced cherry tomatoes
  • 1 tsp sesame seeds

Method
 

  1. Place the avocado in a bowl and mash it with a fork until smooth but slightly chunky
  2. Add lemon juice, olive oil, salt, and black pepper, then mix until creamy and well combined
  3. Taste and adjust seasoning for a balanced, slightly tangy flavor
  4. Spread the avocado mixture evenly over each rice cake
  5. Top with sliced cherry tomatoes and sprinkle fresh herbs over the surface
  6. Finish with sesame seeds for a light crunch and nutty aroma
  7. Serve immediately while the rice cake remains crisp and fresh
