Ingredients
  

  • 20 thin pepperoni slices
  • 1 cup 100 g shredded cheese (cheddar, mozzarella, or blend)
  • Optional: pinch of Italian seasoning
  • Optional: pinch of crushed red pepper flakes

Method
 

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper to prevent sticking.
  2. Arrange the pepperoni slices in a single layer on the lined tray, leaving small gaps between each one.
  3. Bake the pepperoni slices for about 5 minutes until the edges curl up and begin to crisp as the fat renders.
  4. Remove the tray from the oven and gently place about 1 tablespoon of shredded cheese on top of each pepperoni slice.
  5. Return the tray to the oven for 2–3 more minutes so the cheese melts, bubbles, and develops lightly golden, crispy edges.
  6. Let the pepperoni and cheese crisps cool on the tray for 2–3 minutes; this helps them firm up and become easier to lift off.
  7. Use a spatula or tongs to transfer the crisps to a serving plate and add seasoning like Italian herbs or red pepper flakes if desired
