- Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper to prevent sticking.
- Arrange the pepperoni slices in a single layer on the lined tray, leaving small gaps between each one.
- Bake the pepperoni slices for about 5 minutes until the edges curl up and begin to crisp as the fat renders.
- Remove the tray from the oven and gently place about 1 tablespoon of shredded cheese on top of each pepperoni slice.
- Return the tray to the oven for 2–3 more minutes so the cheese melts, bubbles, and develops lightly golden, crispy edges.
- Let the pepperoni and cheese crisps cool on the tray for 2–3 minutes; this helps them firm up and become easier to lift off.
- Use a spatula or tongs to transfer the crisps to a serving plate and add seasoning like Italian herbs or red pepper flakes if desired
